Mariachi Beef Pasta



Last night I created the best recipe ever! This skillet casserole was inspired by my favorite Donatos pizza, mariachi beef. The heartburn was worth it.

Mariachi Beef Pasta

Ingredients:
1 lb ground beef
3 cups dry penne pasta
6 oz. can tomato paste (+ 1 can water)
8 oz. can tomato sauce
1 cup tomatoes –roma tomatoes sliced or cherry tomatoes halved
2 TBSP jalapeno peppers minced
Spices
¼ tsp red pepper
¾ tsp chili powder
¼ tsp cumin
¼ tsp garlic powder
¼ tsp coriander

Toppings:
1 cup cheddar shredded
1 cup Monterey jack (or provogne) shredded
Grated parmesan cheese
Sour cream

Directions:
-Preheat oven to 375 degrees.
-Cook penne according to directions. Drain.
-Roll ground beef into 50 bite-sized balls, place onto 2 baking sheets and bake at 375 degrees for 10-12 minutes, turning halfway through.
-Mix tomato paste, water, sauce, tomatoes, jalapenos and spices.
-Combine cooked pasta, sauce and meatballs.
-Cover and simmer on low-medium heat for 10 minutes.
-Sprinkle with toppings and serve with sour cream on the side.
